Our very own boss man; Paul started butchering at just 13 years old! He qualified as Butchery Student of the Year in 2006 in GMIT.

Over the years he was very lucky to have complete freedom to showcase his skills and creativity. He enjoys creating new, exciting, and tasty products. He loves the buzz of Galway, chatting to everyone and has always had a great relationship with his colleagues, customers, and suppliers. In 2018 Paul was promoted to Manager of Collerans and he enjoyed this so much so that he began to dream about one day opening his own butcher shop. That dream became a reality with the sudden closure of Collerans. He was amazed with the huge amount of support from the people of Galway to get up and running again and not long after with the help of friends, family and his wife Sharon; Hickey Meats opened its doors!

Outside of work; Paul trains regularly in Point Blank Gym Galway and even has a Black Belt in Brazilian Jiu-Jitsu. He is a avid motorcyclist and owns a Honda CBR Fireblade. During lock-down Paul became a DIY enthusiast and made lots of children's picnic benches for friends and local charities.
